Mac-N-Cheese Nostalgia

For years now I've told Mark of the different meals that my sisters and I used to eat growing up.  My Dad cooked a lot of the time and although he made some really good stuff (at one point he dreamed of being a chef and opening his own restaurant), he also made some...interesting concoctions.


Today Emma was really wanting Mac-N-Cheese for dinner and as she was asking my mind instantly jumped to my Dad's version of the American classic.  

My Dad used to make us Mac-N-Cheese, but he couldn't just make it according to the directions on the box.  He had to tweak it - because heaven forbid we eat something out of a box that didn't have some added ingredients to make it more hardy.  So he would add a can of tuna and a can of cream of mushroom soup (not sure if this is original, but never heard of anyone else fixing it this way).

My sisters and I LOVED it!

I made "Mac-N-Cheese with Tuna" (as we used to call it) for dinner tonight and Emma gobbled it down.  still kid-friendly.

Mark wasn't as thrilled.  Turns out its not really his thang.

As I ate, I just thought about my childhood and all the good memories I have.  I missed home and the way things were back then.  It feels like such a long time ago.  

Once I have our scanner up and running I'll have to post a few pics from back then.  I was an 80's/90's kid all the way! :)

Isn't it funny how the simplest of things can take you back? My two biggest triggers for nostalgia are food & music. It's always so fun to see how far someone has come personally but also be reminded what used to be "cool" back when.

Too funny how something so simple can bring back such fond memories.

However, I have a feeling I'm with Mark on this one..I'd probably pass.

I make Mac N Cheese with tuna all the time! My ex thought I just made that crazy meal up! Glad to know there are other people out there!
